Chocolate Chip Cookie Bars with Pumpkin Seeds

Cookie bars on this cold cold day.

Nothing like a good snow for some baking! Try these chocolate chip pumpkin seed bars, they are grain free, refined sugar free, full of healthy fats and super satisfying.

What you’ll need:

1 cup almond flour 

1 1/2 cups coconut flour 

1 1/2 cups coconut sugar

3/4 cup melted coconut oil

2 teaspoons vanilla

2 1/2 teaspoons baking powder

3 eggs

1 cup Lily’s chocolate chips

1 cup shelled pumpkin seeds roasted

Preheat you oven at 350. Mix flours, baking powder, salt and set aside. Mix melted coconut oil, vanilla, sugar and eggs. Add flour mixture slowly to wet ingredients. Once dough is formed add chocolate chips and pumpkin seeds.

Grease a 9x14 baking dish, press and smooth dough evenly. Bake for 20 mins or till cooked through. Cool completely and drizzle with melted chocolate. Happy healthy indulging ~ Katie
