The Classic Chocolate Chip Cookie Keto/Paleo Style
Oh chocolate chip cookies, they are my boys favorite. Nothing invokes such joy as baking with my boys. It's messy, it's yummy and oh so fun, all things little boys love. These bad boys are free of refined flour and sugar, so naturally I am happy to gobble them down.
1 3/4 cup almond flour
1/2 grass fed butter or coconut oil
1/2 teaspoon baking soda
1/3 cup Lily's chocolate chips
1/3 to 1/2 cup coconut sugar depending on taste
Pinch of salt
1 teaspoon of vanilla
Melt butter or coconut oil on the stove top. Pour into a bowl and combine with egg, coconut sugar, vanilla, salt and baking soda. Once combined add almond flour and chocolate chips. Place cookie dough in the fridge for 10-20 mins till cooled. Remove and form into small balls and place on a parchment paper lined baking sheet. Bake at 350 for 10 minutes. Happy Healthy Indulging!
