Chocolate Chip Banana Bread, Paleo Style

This is a staple in our house. With two little boys who are ALWAYS hungry, I'm continually  looking for ways to fill them up. This is a special treat that I have zero guilt about. Like most of my recipes, these contain lots of healthy fats and fill you up with the almond flour. I like to use coconut sugar because it's an all natural super food that is low glycemic. No sugar or carb crash here! 

Here is what you'll need:

-2 1/2 cups almond flour

-3 very ripe medium bananas

-4 TS coconut oil melted 

-1 ts of baking soda 

-1/2 cup coconut sugar

-pinch of salt

-1/4 ts of allspice

-1 ts of cinnamon

-1 ts vanilla 

-2 eggs

-1/2 cup of Lily's chocolate chips

Preheat the oven at 350. Line a bread pan with parchment paper completely. Mash bananas add coconut sugar, melted coconut oil, vanilla, salt, cinnamon, allspice, eggs and baking soda. Add almond flour and chocolate chips, combine and pour into bread pan. Bake for 40-50 mins depending on your oven. As always, Happy Healthy Cooking~ Katie
