Chocolate Almond Butter Cups with Berry Chia Jam

It’s our first week of remote learning this year and made these to celebrate! This yummy treat is full of healthy fats, naturally sweetened and super indulgent. Check them out!

Ingredients:

Almond Butter filing-

  • 1 cup almond butter

  • 1 tablespoon coconut oil

  • 1 teaspoon cinnamon

  • 1 tablespoon raw honey

  • 2 tablespoons cocoa powder

Simple Berry Jam:

  • 1 cup of berries (I like strawberry, raspberry or blackberry)

  • 2 teaspoons of raw honey

  • 3 tablespoons of chia seeds

  • 1 tablespoon of juice of choice

Chocolate shell:

  • 8 oz of baking chocolate, melted with 1 teaspoon coconut oil

  1. Blend jam ingredients leaving the chis seeds out. Add chia once blended. Set aside to thicken.

  2. Melt almond butter, coconut oil. Add salt, cocoa powder, cinnamon and honey. Put in fridge to cool.

  3. Melt chocolate in a double boiler.

  4. In a lined muffin tin pour 1 tablespoon of chocolate. Put in the fridge to harden.

  5. Once hard pour about 1 tablespoon of almond butter mixture.

  6. Top with 1 tablespoon of jam.

  7. Top with remaining chocolate.

  8. Freeze for about 2 hours, enjoy!
