Blueberry breakfast bars!

Getting ready for the week around here and wanted a little treat for the mornings. Theses are packed with all the good stuff and are the perfect substitute to those morning pasty’s. Grain free, paleo and refined sugar free.

Blueberry breakfast bars:

Crust:

-2 cups Birch Benders paleo pancake mix

-1/3 cup honey

-1 teaspoon vanilla -pinch of salt

-1/3 cup melted coconut oil

Filling:

-1 3/4 cups blueberries -2 Tablespoons honey

-1 tablespoon of pancake mix

Topping:

-1/4 of crust

-1/4 chopped walnuts

Preheat oven at 350. Mix crust ingredients together, (save a 1/4 for topping) press into an lined 8x8 pan. Bake for 10 mins or till sides turn light brown. Remove and let cool for 5 minutes.

While it bakes, cook filling ingredients on the stovetop on medium. Mash the blueberries and cook till sauce thickens about 5 minutes. Move to cool.

Pour blueberries over crust. Mix rest of crust mixture with walnuts and pour/press on top. Bake for 20 mins. Cool and enjoy all week long! Happy healthy breakfasts~ Katie
