Simple Grain-Free Enchiladas

Sunday dinner...Simple Grain Free Enchiladas 

Guys you know I love desserts but I also like to transform everyday dishes into a healthier version. I’m all about eating what you like with a healthy spin. Take these enchiladas, the grain free tortillas and cauliflower rice are super easy subs to a classic dish. These little changes add up and your body will thank you!

Simple Grain free enchiladas:

-8 Siete tortillas (I like the cassava kind)

-1 1/2 cups shredded pepper jack cheese

-1/2 onion, chopped

-2 garlic cloves, chopped

-15oz can or jar of red enchilada sauce

-1lb of ground turkey or chicken

-1 can of black beans, drained

-1 packet of taco seasoning

-10oz of cauliflower rice, frozen or fresh

Preheat oven at 350. Add chopped onion and garlic to pan, sauté till soften. Add ground turkey and cauliflower rice, stir frequently till cooked through. Add taco seasoning. Remove from heat, stir in beans and 1 cup of the enchilada sauce.

Put half of the meat mixture into a casserole dish. Top with half of the tortillas. Top with a 1/2 cup of cheese. Then add the rest of the meat mixture. Top with remaining tortillas, then rest of enchilada sauce and one cup of cheese. Bake for 25-30 minutes. Sever with avocado, Siete chips, cilantro, hot sauce or whatever! Happy healthy cooking~ Katie
