Spicy Shrimp and Sausage Jambalaya

Spicy Shrimp and Sausage Jambalaya, all the flavor and paleo, grain free and low carb.

Okay okay I’m just embracing the chilly weather here in Denver, bring on the heat! Plus it’s great for your metabolism, fills you up quickly and full of healthy fats leaving you very satisfied. I needed a reset after summer and traveling, we have all been there! I’m taking a break from sugar and most starches. I am all about healthier versions on the stuff I love. My mom is from the south and man do they do it right down there. So here comes some warm and spicy jambalaya…

Ingredients:

-1 red bell pepper, chopped

-1 green bell pepper, chopped

-1/2 onion diced

-3 celery sticks, chopped

-2 tablespoons chopped garlic

-1 14oz can fire roasted tomatoes

-1lb chicken sausage

-1lb fresh shrimp with tails

-1 1/2 tablespoons Cajun seasoning (add salt if needed)

-1-2 tablespoons red pepper flakes for more heat

-1 bag of frozen cauliflower rice

-1-2 cups chicken broth (depends on how thick you like it)

In a big cooking pot heat sliced sausage in a pan till brown, remove and put on the side. Add onion, bell peppers, celery and garlic, cook till slightly tender. Add broth, Cajun seasoning, broth and sausage. Simmer on low for 20-30 mins. Add cauliflower rice and shrimp. Cook till shrimp is cooked through, don’t over cook the shrimp. Remove and enjoy!
