Lemon Blueberry Breakfast Cake

Christmas Breakfast Cake anyone?

It’s getting festive around here with Lemon Blueberry Breakfast Cake. I love having breakfast ready to roll Christmas morning so I can relax and enjoy the moment. And who doesn’t like cake for breakfast? Made mine gluten free but easily made paleo style.

Ingredients:

  • 1/2 cup butter or coconut oil, melted

  • 1 lemon zested

  • 3/4 sugar or coconut sugar

  • 1 egg

  • 1 teaspoon vanilla

  • 2 cups gluten free flour or Benders paleo pancake mix

  • 2 teaspoons baking powder

  • pinch of salt

  • 2 cups blueberries

  • 1/2 cup milk or alternative milk

Preheat at 325. Mix all ingredients together, leave about 1/4 of blueberries for the top. Pour into a greased 8 inch cake pan, I love my spring one. Top with extra blueberries and some sugar. Bake for 50-55 mins.
