Celiac/Gluten Free Friendly Sourdough Bread

Having Celiac I miss bread the most, am I right?! But here it is, homemade gluten free sourdough that is actually good! Let’s get to it…

Here is what you need:

  • 1 cup Gluten free stater (I like Cultures for Health Gluten-Free Sourdough Starter Culture)

  • 4 cups gluten free flour with extra for kneading (I use King Arthur, Measure for Measure Flour)

  • 3 cups of water

  • 1 teaspoon xanthan gum

  • 2 tablespoons Psyllium Husk Powder

  • 1 tablespoon salt

  1. Mix 1 cup sourdough starter with 1 cup water and 1 cup flour. Cover and refrigerate for at least 12 hours.

  2. Take it out of fridge, mix with the rest of the ingredients. Once dough is formed divid into two. Flour counter and knead dough for about a minute. Form into a ball, put in a bowl, cover with a wet towel for 4-8 hours to rise. Repeat with second loaf.

  3. Turn oven on at 475, preheat with dutch oven inside. Once heater, place dough gently on parchment paper and cut slits in dough to help with cracking. Remove lid and gently put dough into dutch oven. On the outside of the parchment add one ice cube and quickly cover with lid to steam.

  4. Bake for 55 mins. Remove lid and bake for 10 more mins or till golden brown.
