Rustic Pumpkin Spiced Donuts

I have been dreaming of cooler weather around here and man do I love to cook in it! Plus, the boys started at new schools and wanted to surprise them with a special treat. These are grain free, refined sugar free and paleo. You want to embrace the change in weather with me? Here we go…

What you’ll need:

  • 2 cups grain free flour (I like Birch Benders Paleo Pancake mix)

  • 1/2 cup coconut sugar

  • 1 cup pumpkin puree

  • 1/4 almond milk

  • 1/4 coconut oil, melted

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon pumpkin pie spice

  • 1/2 teaspoon cinnamon

  • 2 eggs

Topping:

  • 1/2 cup melted coconut oil

  • 1/2 cup coconut sugar

  • 1 1/2 teaspoons cinnamon

Preheat oven at 350. Combine all wet ingredients till smooth. Add rest of ingredients, combine and pour into a ziplock bag. Cut a small hole in the side and pipe into greased donut dish. Bake for 14-17 mins till firm. While baking combine topping sugar and cinnamon in one bowl and melt coconut oil in other. Dip tops of donuts into the oil and then coat with sugar mixture. Repeat.
