No Bake Cookie Dough Fudge

I love baking, it’s a simple pleasure of mine. During this time of pause, I have been doing it a lot. Plus my boys are home and cooking is so much fun. Here is what we made (paleo style)….

  • 1 cup almond butter or nut or seed butter of choice

  • 1/4 cup of coconut oil

  • 4 tablespoons of raw honey or maple syrup

  • 1 teaspoon of vanilla

  • 1/3 cup of dark chocolate chips

  • pinch of salt

Melt almond butter, coconut oil, honey over a double boiler till smooth. Remove from heat. Add vanilla. In a loaf or bread pan lined with parchment pour mixture in. Drop half the chocolates in. Freeze for 20 mins. Remove and drop the rest of chocolate on top with a pinch of salt. Freeze for 30 more mins. Remove and cut into bits size bars. To keep freeze or keeps in fridge.
