Paleo Lemon Raspberry Muffins

Another Sunday morning around here and time for some baking. These Paleo muffins are super easy and yummy with a little raw honey drizzled on top.

What you will need:

  • 2 cups almond flour

  • 1/4 cup cassava flour

  • 3/4 teaspoon baking soda

  • 1/3 cup lemon juice

  • 1 lemon, zested

  • 1 pint of fresh raspberries

  • 4 eggs

  • 1/3 cup raw honey honey, slightly melted

  • 1/4 cup coconut oil

  • 3 table spoons raw honey, slightly warm to drizzle on top

Preheat oven at 350. Combine liquids till smooth. Add flour, baking soda and raspberries. Mix well. pour into a lined muffin pan. Bake for 16-18 mins.
